Creamy Comforting Cauliflower Soup

Ingredients:

  • Florets from 1 head cauliflower

  • Half a yellow squash

  • 1 stalk of celery

  • 1 small onion

  • 2 cans chickpeas, plus extra for garnish

  • 1/4 cup raw cashew pieces

  • 1/2-3/4 cup organic nongmo soy milk

  • 4 cups water

  • 2 cloves (or 2 frozen cubes) fresh garlic

  • 1 teaspoon (or 1 frozen cube) fresh ginger

  • 1/4 teaspoon black pepper

  • 1 tablespoon salt

  • 1- 1 1/2 teaspoon turmeric powder

  • Golden raisins (optional)

  • Parsley for garnish (optional)

  • Harissa (optional)

  • Tahini (optional)

Directions:

  1. Put all ingredients except soy milk in crock pot on high for about 4 hours (or just boil in regular pot) until ingredients are soft.

  2. Transfer to blender and blend until very creamy and smooth.

  3. Transfer back to pot and add soy milk.

  4. Garnish with optional raisins, chickpeas, parsley, tahini, and harissa.
