This is the healthiest comfort food you'll ever taste, with only 9 ingredients - that includes salt and pepper! Seriously, I kept feeling guilty while eating it and then reminding myself there was no need for that. Pasta with cream sauce, fresh tomatoes, and basil sounds pretty indulgent, right? What if I told you the pasta was made entirely of red lentils (from Trader Joe's! If you're not usually a fan of bean pasta, keep reading, because neither am I), the sauce was made almost entirely from cauliflower, and there wasn't a drop of oil/butter to be found...but it still tasted fantastic? Ok so that's what I'm telling you.I've tried lots of bean pastas and usually don't like the taste, texture, or both. But this particular red lentil one from Trader Joe's has great texture AND flavor! Just be careful not to overcook, and to rinse after cooking. Trust me, it's worth trying.P.S. My toddler ate a whole serving.

SILKY ROASTED BEET HUMMUS

Are y'all ready to switch up your hummus game with something a little sweet, a little earthy, a little tangy, and a lot yummy? Packed with insane amounts of detoxifying vitamins and minerals, this baby boosts immunity and protects against heart disease. It's also got a really luxuriously smooth texture, which is not so easy to come by in an oil-free recipe. And that color tho...major bonus. It's worth trying just for that!
You can enjoy it like any veggie dip, or with crackers or crusty whole grain bread...or just a spoon.... It was also phenom in a homemade pita with avocado, apple slices, lemony mixed greens, roasted chickpeas, and a few walnuts. Ugh, now my mouth is watering. Let's get to it.
